Everyone loves ice cream cake, but the origins of the sweet birthday treat are shrouded in mystery. Not much is known about the earliest stages of ice cream in cake form, but it seems to have originated in the 1700’s in England, among the lords and ladies who were wealthy enough to afford the treat without modern freezers. Ice cream cakes became more popular in the 19th century, in the Victorian Era; but they didn’t become available to everyone until after World War I, when refrigerators, freezers, and other household appliances became more widely available. Not long after, Egger’s Ice Cream Parlor opened up on Staten Island, and we have been making ice cream cakes ever since.
